It is correct to do a 'modified 3 point' at the canter for the u/s. The only time you "sit" the canter is for equitation flat classes. Also, this video doesn't show 2 point at the canter. Two point is the position the rider takes when actually jumping the fence. The rider's job in a hunter u/s class is to present the horse in the best? way, no specific position is required.
