I got the impression that the lecturer was suggesting we not fear fat as we've been told for the last 40 years (unless it is the very small dense type of inflammatory cholesterol), and that we ought to reduce our intake of sugar and other high glycemic index carbs. ? I agree that white ... By: eternallyraven. on 24 Dec 11, 13:05:47 I agree that white rice is harmful to health in terms of its glycemic load, and that brown rice has more fiber than white rice. However, brown rice does have problems of its own. With the germ still on the rice, it has more anti-nutrient properties and can cause malabsorption of minerals that the body needs. I believe that in the Asian diet, health would improve even more by replacing most or all rice with vegetables instead. You make a very good point, though.?
Yes, I know ... By: eternallyraven. on 24 Dec 11, 12:56:16 Yes, I know vegetable oil (well, certain ones, like olive oil) are not a problem if not heated. Used raw or at low heat baking, olive oil can be used safely. However, when we talk about the use of vegetable oils in our country, we usually mean in cooking. That is why I mention vegetable oils being bad... I meant their low smoke points and carcinogenic properties via heating. Although a plant oil that is good to cook? with (though I don't think it's a vegetable) is coconut oil. :)
