In the case of a cow raised in the environment it is designed for, with its proper diet of GRASS, and without stress; the animal's fat contains a proper balance of omega6, and omega3 fatty acids. While I admire your motives, you have flawed information. The number of fat cells in a person does not significantly change when they become obese. The cells themselves have gone from something like a small normal sized cell, to a large drop of fats barely contained by the cell wall.
