I suggest you pick up a copy of Fats And Oils by Eurasmus. This explains albeit somewhat technically, the whole fat situation. The ideal diet should be mostly monounsaturated fats and some saturated. Polyunsaturates should be avoided at all costs. Remeber your grandparents and great grandparents consumed almost totally saturated animal fats and heart disease was virtually unknown!!!!

How can there be a mixup like this in the medical community. Even my nutrition professor says saturated fats are to be avoided. Don't saturated increase LDL levels?

They are the major cause of liver toxicity, inflammation in the body, and are the number one cause of heart disease, the number one killer.... Olive oil and all monounsaturated oils are the best. Secondly saturated fats, in moderation, actually lower cholesterol levels over time due to the effect of their key fatty acids on the liver function. Remember, we don't eat cholesterol it is made and regulated in the liver.
